Pacific Coast Spirits is the vision of founder and head distiller Nicholas Hammond. He has spent most his life pursuing the passion of beverage, whether brewing, winemaking or distilling. He spent the last decade traveling and training in the spirits industry, from studying Pisco production in Chile and Tequila in Mexico to working at distilleries in Texas, Oregon, San Diego and Los Angeles. This vision was born out of the sheer passion of crafting.
The Pacific Coast Spirits Story
Pacific Coast Spirits is the culmination of a decade of passion, education and adventure. We create handcrafted small batch spirits with a balance of creativity, innovation and old world techniques. We use only premium ingredients, sourced as locally as possible to the Pacific Coast, developing spirits representative of this beautiful region.
We founded our distillery in the heart of the craft brewing mecca of San Diego and share a similar approach with our craft brewing neighbors in our crafting of spirits. We have amazing freedom in American craft distilling, we are not restricted to certain varietals of grape used in our brandy like France or on grain for whiskey like Scotland. We are in a truly craft environment and we explore all paths of adventure with no boundaries.
Our spirits are created through experimentation, creativity and adventure. We broaden our palate and craft by developing a wide variety of spirits. No batch of aged spirit we release is the same. Each is distinct and an adventure in its own right.
